Thats one of the best things  next to  “vattal kolambu”   in the tambhram cuisines, That “manam” of the “perungayam” in rasam gets into a “thani pasi” level!!!
Rasam has many flavors– milagu jeeragam,poondu,thakali,mysore,elimicham pazham,kadanthipli-arusithipili,pineapple .. n many more…:)

This blog is all about my learning experience with rasam,,(thakali rasam first kathukurein… mathadhu aparam ma kathukalam)

 (Having known the procedure of making rasam.. still wanted to be a pro in making it..)

Me:  Amma  ennaku leave iniki,  naan rasam pana kathukurein.. adhum nalla vaasanaiyana rasam.. tips kudukureil ah”

(Amma  surprised !!)

Amma: “neeya kathukurein nu solaracha ,kathutharein!! aana,, thala mudinjindu  ,kaiya alambindu va”

Amma dictates Tips:

“Oru kotta paaku size daan eduthukanum puli.. nariya eduthunda.. pulipa irukum”.. “kodhikarcha oru sottu  nei oothu,appo daan pongadu “..
“parupu ah karandi aala masichitu..parupu thanni matum daan vidanum.. nariya parupu potu kodhikavitasambar madiri aagidum”

Me: seri amma… naan panurein.. doubt irundha ketukurein..

(after every 5 minutes gap)

Amma: “rasam podi potiyono ” ( it is the same sambar podi that is used for rasam here with quantity difference ,we hardly get sambar podi and rasam podi here in North .

We get enough sambar podi packed from South during our summer vacation that would last for 6 months and more and Thanks to the “pakathu aham”maami, they would help us getting the same from South if scarce is left in the granary)

 Amma: ” takalli vendhudutha?”

me: vendhundu iruku amma…

Amma: “perungayam potiyo,uppu potiyo?” .. perungayam vaasanaiye varalaye..

me: “inga vardhu amma”

(and finally after enough boiling and all)

me: “rasam panitein amma.. nalla vaasanaya iruku.. poi paarungo”

Amma: “kothamalli nariya alasi potiya”

Me:  “aam aah nalla nariya potein”

she walks into kitchen to find all clumsy here and there with “puli sakka” oru side.. kothamalli alasina thanni and aanjuvetcha kothamalli oru side..
and there amma shouts from kitchen

Amma: ” enna di.. thalichu kotala??… thalichu kotama enna rasam?”

Me: neeye panidu amma :P:D ( sitting happily in sofa,tired by making rasam!!!)  She had always been specific with talikardhu(oru mootai nei la,kadugu,jeeragam,karuvepalai)  and bet me.. it would taste yumm!!
(cleaning and thalikardhu always vendorized  to amma)

There comes yummy tasty rasam (nalla vasanayana rasam) on the table for lunch..

Behind the woods:

Would have melted eeyamsombu atleast 3 to 4 times while learning and being in Delhi,We would need to wait for our summer vacations to come and finally
get a new eeyam sombu from South.. 🙂

amma’s reaction everytym I melted sombu:” naaney panurein nu sonna,,, ketkuriyo.. kathukurein nu.. eeyam urukidu..
naaaku mozhangaaluku keezha vari iruku.,.. sadarna aduku la rasam vetcha.. rasam  ..rasam ma illayam mey , kathukarcha adukula vetcha enna..”

 appa enters  ..

“paavam kozhandai iniki samachirka,,, avala yen titura.,,, thappu panama epudi kathupaa.. ” finally my saviour everytime.

  1. please let us know what should be the heat required to ensure that the sombu does not melt? i faced this disaster once and never experimented again!
